I made this to go with the Ragout for R’s birthday. Originally I was going to put a graham cracker layer base but I didn’t have enough crumbs so I just skipped that layer.


Rice Krispie Layer

1/4 cup     margarine or butter

1 pkg        (about 40) regular marshmallows or 5 cups miniature

1/2 tsp      vanilla extract (optional)

6 cups      RICE KRISPIES* cereal

 

Spray a 10" spring-form pan.

Melt margarine in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.

 

Stir in vanilla. Stir in KELLOGG’S* RICE KRISPIES* cereal until well coated. Using lightly buttered spatula, press into sprayed pan. Cool in fridge while making Icing.

Tip: Do not pack down too hard but make sure it is firm especially around the edges.

Fudge Icing Layer

 

 

1 1/2 cups sugar
1/4 cup cocoa

1/4 cup milk

1/2 cup butter

1 teaspoon vanilla

 

Combine first 4 ingredients and bring to boil, stirring constantly.  Boil hard 1 minute without stirring.

Remove from heat, add vanilla and beat until spreading consistency.  It will turn slightly glossy but still pourable.

Quickly pour icing over krispie layer and even out with spatula. Sprinkle nuts on top and press in slightly.

Keep in fridge until one hour before serving. Slice with sharp knife and serve.


Edit: R says that perhaps there should be a little less icing, as in using 1/2 – 3/4 of the recipe and save the rest for something else
