Peanut butter and chocolate is a wonderful flavour combination. Its funny because peanut butter alone isn’t one of my faves. But if is in a sauce on some Asian food or paired with chocolate; well lets just say that there are some foods that can make me…very compliant. This is one of them.
I pulled this off of Recipezaar because it was so easy and quick. Good thing as my body is complaining rather loudly this week. And I got to play with chocolate!…and get it everywhere! Yum.
Chocolate Covered Peanut Butter Eggs
1/4 cup Butter
1/4 cup firmly packed Brown Sugar
3/4 cup Powdered Sugar
1/2 cup smooth Peanut Butter
1 tsp Vanilla
1 (12 ounce) package Semi- or Bitter- sweet Chocolate Chips (your choice)
2 tbsp Shortening
In a 1 quart microwavable bowl, microwave the butter and brown sugar together on 100% (high) for 1 to 1-1/2 mins, stirring every 30 seconds or until brown sugar is melted. Stir in powdered sugar, peanut butter and vanilla extract.
Shape by teaspoonful into egg shapes; chill. (I used a 2 tbsp food scoop)
In double boiler or heavy saucepan, over low heat, melt chocolate chips together with the 2 tbsp of shortening.*
With a wooden skewer, dip each egg into chocolate chip mixture, coating completely. (I used a couple of forks)
Place on a baking sheet that has been covered with waxed paper. Chill several hours.
Keep stored in the fridge.
